Pumpkin soup
Ingredients:
2 tblsps olive oil
2 large onions
3oz bacon
8oz carrots
1 large potato
1.5lbs pumpkin flesh
1.5lbs skinned tomatoes or 2 tins
2pts chicken or bacon stock
pinch of nutmeg
4oz red lentils
black pepper
10 fl.oz milk
Instructions:
Lightly fry chopped onions and bacon in olive oil, add carrot a few mins before adding all other ingredients except milk. Simmer for 35 mins or until cooked. Cool, purée, season, add milk and reheat.
